3/4 cups canned chickpeas, rinsed and drained
1 Tbsp lemon juice, divided
1/4 tsp dried oregano
1/4 cup(s) , chopped roasted red peppers (packed in water)
1/2 cup cucumbers, chopped
1/2 cup grape tomatoes, chopped
2 Tbsp crumbled feta cheese
4 oz shrimp, peeled cooked shrimp
2 Tbsp tzatziki (cucumber yogurt sauce)
In a medium bowl, mash together the chickpeas, 1 ½ tsp lemon juice, and oregano to your desired consistency; stir in the red peppers. Spoon the chickpea mixture into a shallow bowl.
In the same bowl used to mash the chickpeas, toss together the cucumber, tomatoes, feta, and remaining 1 ½ tsp lemon juice. Spoon the cucumber mixture over the chickpea mixture. Arrange the shrimp and tzatziki in the bowl.
